What's for dinner?

 

How many of you have asked that when you get home?  This week we will be sharing what a typical meal is like in our family.  Students will describe what dinner time is like at their house.  Students will also take pictures of the meal and their families eating together. Students will share their meals using voicethread.  Students will also share some of their favorite recipes.  Do you have some fast food restaurants?  What are your favorites?  Students will need to share their information no later than September 15.

Cinnamon and Sugar Cake (Maize Middle School)

1 box yellow cake mix

1 stick butter

1 cup sugar

3 TBSP cinnamon

Make cake as directed on box and bake at 350 degrees.

Let cool.  Spread butter all over top of cake.  Mix sugar and cinnamon together in a bowl.  Sprinkle with sugar and cinnamon mixture.

 

Frosted Apple Cinnamon Bars (Maize Middle School)

Bars

1 1/3 Cups Flour

1 t Salt

¾ t Baking Soda

1 ½ Cups Old Fashioned Oats

¾ Cups Butter

¾ Cups Brown Sugar

½ Cup Sugar

2 Eggs

1 t Vanilla

1 Package Cinnamon Baking Chips (10 oz)

1 Apple Chopped

 

Frosting

¼ Cup Butter (softened)

½ Package Cream Cheese (4 oz)

1 t Vanilla

2 t Cinnamon

Powdered Sugar to Spreadable Consistancy

 

Preheat oven to 350

 

Combine first four ingredients in a medium bowl.

 

Combine butter and sugars in a large bowl and beat until creamy.  Add eggs and vanilla.  Add flour mixture and beat well.  Stir in chips and apple.

 

Spread in a greased 9 X 13 pan and bake for 35 minutes.

 

Mix frosting ingredients and spread over cooled bars.

 

Spaghetti (Maize Middle School)

 

1 hand full of noodles

3 cups of Spaghetti Sauce

3 cups of water

 

Put the water in a pot and boil it.  Once water is boiling, put the noodles in it to cook till soft.  While doing the noodles get a pan and start browning the meat. Once it is brown put the spaghetti sauce in it and stir so the meat is mixed in it.

 

In Russia we have 3 meals a day (breakfast, dinner and supper). The most popular dishes are borsch, pelmenis, blini and shashlik(kebab). 

Borsch is a kind of soup, the main ingridient-beetroot, it's made of cabbage, potatoes, carrots, tomatoes and meat.

Pelmenis are made of dough and meat and then they can be frozen and kept in the fridge for a long time. They are boiled in the water and served with butter, sour cream, vinegar or tomato ketchup.

Blini, you know as pancakes. They are usually eaten with sour cream, jam, chees and red caviar ( the black one is forbbiden in Russia).

And most of all we like shashlik. The dish originates from the Caucasus and we live at the Black sea coast of the Northen Caucasus it is very popular here. It is made from meat or fish, marinated in herbs, onions and wine or tomatoes or kiwi, then the meat is put on skewers and cook on an open fire.

In Poland we usually eat dinner in the afternoon.

The first course is soup, like tomato or mashroom soup.

The second course is meat ( eg chicken, pork, duck or fish) with potatoes ( or chips, rice etc) and salad or cooked vegetables. It can be also pasta, pizza or risotto.

A traditional Sunday dinner, in Silesia region where we live, is served in the early afternoon. The first course is broth. The second is rolled pieces of beef with pickle and onion in it, "kluski" ( dumplings made of potatoes) and cooked red cabegge. Our parents sometimes drink beer or wine. We drink water or juice.

We have three meals a day - like in Russia. We also like borsch and shashlik.

 

These are our easy and favourite recipes:

 

KOPYTKA ( "hooves")

Ingredients:

1,25 kg potatoes

2 cups flour

2 eggs

1 pinch of salt

 

Cook potatoes, dry and let them cool down.

Grind them.

Stir in eggs and flour.

Roll dough and cut into small pieces.

Cook in boiling salty water until they come to the top.

Serve with gravy or mashroom sauce.

 

APPLE PIE

 

Ingredients:

4 eggs

1 cup flour

1 cup sugar

4 tsp oil

1 tsp baking power

4 apples

vanilla sugar

cinnamon

 

Stir together all ingredients. Add diced apples, sprinkle cinnamon. Pour dough into baking dish. Bake for 40 min. ( until golden brown) in 170 C.

 

 

Tacos ~ (Mirage Elementary, Phoenix AZ) 

 

Ingredients

  • Chopped chicken or beef
  • Grated cheese
  • Chopped tomatoes
  • Chopped lettuce/Cilantro
  • Tortillas
  • Salsa/Pico-de-gallo
  • Sour cream/Cream cheese
  • Taco seasoning mix/Cumin (a pinch) or Curry/Chile Powder

 

 

Steps

Cook the chopped (or shredded) meat or chicken in a skillet. When it is well cooked, then add the seasoning.

Heat the tortillas in the microwave or between slightly dampened dish towels or paper towels in an oven.

Put meat in tortilla first, then add all the raw vegetables like lettuce, tomatoes, and the salsa.

Then add the cheese (or you may melt the cheese over the meat in the microwave or such) and sour cream into the tortilla.

Fold the tops of the tortillas together, tuck into a wrapper to avoid dripping juices and enjoy.

 

Mr. Dell's Original Potato Casserole (Maize Middle School)

 

You will need:

10 cups Mr. Dell’s Shredded Hash Browns
1/4 cup + 2 T. butter or margarine
1 can cream of chicken soup
12-oz. sour cream
1/2 cup milk
1/2 cup chopped green onions
2 cups grated cheddar cheese
1 cup crushed corn flakes
Salt and pepper to taste  

Preheat oven to 375° F. Melt 1/4 cup butter or margarine and pour into 9 x 13 inch baking dish, then add 5 cups of Mr. Dell’s Hash Browns. (No need to thaw.) In separate bowl, mix soup, sour cream, milk, and green onions, then pour 1/2 of this mixture over hash browns. Salt and pepper to taste. Sprinkle one cup grated cheese on top. Add remainder of hash browns and pour remainder of mixture on top, salt and pepper. Sprinkle remaining cheese on top, then cover with crushed corn flakes. Drizzle two tablespoons melted butter or margarine over mixture and bake for 55 minutes.

MICROWAVE: Cook 16-20 minutes, turning dish 1/4 turn four times during cooking. Caution: Do not use metal baking pan when microwaving.

Meat Loaf (Maize Middle School)

Makes 6 dishes

 

Ingredients:

      1 can of condensed cream of mushroom or tomato soup

      1 ½ pound ground beef

      ½ cup dry bread crumbs

      ¼ cup finely chopped onions

      1 tablespoon Worcestershire sauce

      1 egg, beaten

      1/8 teaspoon pepper

      ¼ cup water

 

Directions:

      In a large bowl mix ½ cup of soup, beef, bread crumbs, onion, Worcestershire, egg, and pepper. In 12- by 8- inch baking pan firmly shape meat into 8- by 4- inch loaf 

      Bake at 350° F for 1 ¼ hours or until meat loaf is thoroughly cooked and no pink remains. Spoon off fat, reserving 1 to 2 tablespoons for drippings. 

      In 1 quart saucepan over medium heat, heat remaining soup, water, and reserved drippings to boil, stirring occasionally.  Serve sauce with meat loaf. 

 

 

Butterfinger   Cheesecake (Maize Middle School) 

  1. Mix together:
  • o   8 oz  Cream Cheese
  • o   ½ cup Powdered Sugar
  • o   1 tsp vanilla

 

   2.             Fold in:

  • o   1 cup Whipped Topping
  • o   2 Butterfinger  fun-size candy bars (crushed)

 

   3.  Pour into 6 individual size graham cracker crusts.  Sprinkle with one more crushed candy bar.   Chill in refrigerator 

 

*Note:  Doubling this recipe will fit a regular size graham cracker crust.

 

Recipe for 1 gallon of homemade ice cream (Maize Middle School)

6 eggs

2 cups of sugar

2 tablespoons of vanilla

Dash of salt

24 oz of whipping cream

Beat eggs and sugar unlit sugar is completely dissolved.

Add vanilla, salt, and whipping cream

Pour in 1 gallon freezer

Add milk to fill line and freeze. 

 

Banana Bread  (Maize Middle School)

3 cups of flour

1 teaspoon each: baking soda, baking powder, salt, cinnamon, nutmeg

2 cups of sugar

1 cup of vegetable oil

3 eggs

2 cups of bananas

1 teaspoon vanilla

1 cup of nuts (optional)

 

Combine all ingredients. Bake in two loaf pans at 350 degrees. Bake for about 55 minutes or until done. 

 

 

 

Tuna casserole (Maize Middle School)

Oven temp 350, 30min. serves 4

 

2 cups dry noodles

1 can cream of mushroom

1 can tuna, drained

Colby jack cheese

 

Cook noodles, drain. Add soup, tuna and 1-2 cups of cheese.

 

Dinner (Maize Middle School) 

fried chicken: 6 piecies chicken; 2 cups of flour; teaspoon of salt and  teaspoon of pepper;  teaspoon of seasoning salt; 2 cups of butter milk; 3 eggs; 4 tablespoons crisco
heat oil; rinse chicken; mix butter milk and eggs; dredge chicken in mixture; coat with flour; place in fryin pan and fry for 45 minutes
fry on 15 mins one side and rotate
Mashed potatoes: Boil potatoes til soft; drain water; 1cup of milk; half of stick of butter; mash
Can of fresh cut green beans french style

 

     Chocolate No-Bake cookies (Maize Middle School)

 

    2 cups of sugar   Mix all together well and cook

                                                                                                On top of stove for 1 min.

                                                                                                Remove from heat

    3 T cocoa

    ½ cup of milk

    1 t vanilla

 

    Add: ½ cup of peanut butter and three cups of uncooked oatmeal. Mix well and drop teaspoon on to wax paper or cookie sheets.

West Virginia - Grandma’s Corn Bread Ingredients

  • 1/2 cup butter
  • 2/3 cup white sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 teaspoon baking soda
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt

 

Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan.

Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.

Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.

Soup Beans

Like poor people everywhere, mountain people in the South thrived for centuries on food that was indigenous, inexpensive and healthful. These days "soup beans" speak instant comfort to anyone who had familial connections from Appalachia, where every garden produced shelling beans that could be eaten fresh or grown to maturity for dry beans. Serve this thick, stew like soup with cornbread, pickle relish and diced sweet onion.

 Clean and soak your beans overnight in water.

Servings:

8 servings, 3/4 cup each

Prep: 20 mins

Total: 3 hrs 10 mins

Ingredients

1 pound  pinto, (about  2 1/2 cups)

12 cups  water

8 ounces  finely diced ham, (about 1 1/2 cups)

1   medium onion, peeled

1 clove  garlic , peeled

1/2 teaspoon  salt

1 teaspoon  freshly ground pepper

1/4 teaspoon  crushed red pepper

 

Directions

1. Place beans, water, ham, onion, garlic, salt, pepper and crushed red pepper in a large Dutch oven; bring to a boil. Reduce heat and simmer, stirring occasionally, until the beans are very tender and beginning to burst, 3 to4  hours. If necessary, add an additional 1/2 to 1 cup water while simmering to keep the beans just submerged in cooking liquid.

2. Remove from the heat; discard the onion and garlic. Transfer 2 cups of the beans to a medium bowl and coarsely mash with a fork or potato masher. Return the mashed beans to the pot; stir to combine.

Tip:
MAKE AHEAD TIP: Cover and refrigerate for up to 3 days or freeze for up to 3 months.

 

 

Banana Nut Bread-Bay Harbor School, Green Bay, WI

1/2 c. shortening

1 tsp. vanilla

1 1/3 c. brown sugar

2 eggs

2 cups flour

1/2 tsp. salt

1/4 c. milk

1/2 tsp. vinegar

1 c. mashed bananas

1/2 c. chopped nuts

Preheat oven to 350 degrees. Cream shortening, sugar, vanilla and eggs. Stir in dry ingredients, alternating with milk, vinegar and bananas.  Add nuts.  Spray loaf pan with Pam and bake for 60 minutes.

 

In Wisconsin, some common foods are cheese curds (especially when they are fresh and squeaky!), brats, chili and chili/cheese fries and/or chili cheese hotdogs.  

 

Hearty Pea and Ham Soup

Ingredients

1 onion, chopped

1 teaspoon olive oil

500g dried green split peas

1 ham hock or bone

salt and freshly ground black pepper to taste

preparation method

1.

In a medium saucepan, fry onions in oil for about `1 minute. Remove from heat and add split peas and ham hock or bone. Add enough water to cover ingredients, and season with salt and pepper.

2.

Cover, and cook until there are no peas left, just a green liquid, about 2 hours. While it is cooking, check to see if water has evaporated. You may need to add more water as the soup continues to cook.

Tip:

If you don't want to add a ham hock or bone, you can always use diced ham.

 125 g of unsalted butter
75  g(1 1/3 cups)caster sugar
155 g (1 1/4  cups) plain flour, sifted
Icing sugar to dust
Topping:
4 eggs lightly beaten
250 g (1 cup) caster sugar
60ml (1/4 cup) lemon juice
1 teaspoon finely grated lemon zest
30 g (1/4 cup)plain flour
1/2 teaspoon baking soda

Step 1)
Preheat oven to 180 (degrees Celsius )lightly grease a
20x30 cm baking tin and line with baking paper ,leaving
 the paperhanging over two opposite sides.

Step 2)cream the butter and sugar with electric beater
until pale and fluffy, fold in the flour with a metal spoon
Press into the tin and bake for 20 minutes or until golden and firm,
Leave to cool.

Step 3)
Beat the eggs and sugar with the electric beaters
For  2 minutes or until light and fluffy. Stir in the
Lemon juice and lemon zest. Sift together the flour
and baking powder and gradually whisk into the egg
Mixture. Pour onto the base. Bake for 25 minutes or
 until just firm cool in the tin and dust with icing sugar.

Makes about 30

forgotten cookies : recipe 4 egg whites and 11/2 cups of sugar and 12 ounces of chocolate chips:Beat egg whites and sugar until stiff.Fold in chocolate chips.Drop on buttrered cookie sheets.Place cookies in preheated 375 degree oven.turn off oven and leave oven night for 6 hours.Makes about three dozens
